Char Grilled Bourbon Peaches with Vanilla Sauce over Ice Cream
Ingredients

4 medium size peaches (firm, but ripe; cut in half; pit removed)

6 ounces peach bourbon

4 teaspoons butter

4 teaspoons corn syrup
-
2 teaspoons dark brown sugar or molasses

1 teaspoon cinnamon

1 teaspoon vanilla extract
Preperation:
Soak peach halves with bourbon to marinate in refrigerator for an hour (turning periodically or place in zip lock bag and shake lightly)
Remove peaches from bag (reserve juice for sauce)
Grill peaches (you want the grilled color, but do not want to fully cook the peach)
Let them cool, the cut into 1/4 inch slices
In sauté pan, combine butter, brown sugar , corn syrup, cinnamon and bring to a light simmer
Add vanilla and sliced peaches, then coat peaches
Finish with the reserved juice from marinating the peaches (be careful because it might flame up)
Bring to a quick simmer
Scoop over vanilla ice cream and enjoy.
